  • Hard News: Feed: Grandpa's Kitchen,

    2 hours | 25 min prep | SERVES 5 , 500 ml

    1 cup water
    1 cup white vinegar
    1/2 cup tomato paste (1 small can)
    3/4 cup dark corn syrup
    1/4 cup frozen orange juice concentrate
    1/4 cup pitted dates (chopped fine)
    3 tablespoons blackstrap molasses
    3 tablespoons apple juice
    3 tablespoons tamarind pulp
    3/4 cup apple cider vinegar
    1/2 teaspoon onion powder
    1/2 teaspoon whole cloves
    1/2 teaspoon whole black peppercorns
    1/2 teaspoon cardamom (ground)
    1/2 teaspoon garlic powder
    1/2 teaspoon mustard seeds
    1 teaspoon coarse salt
    1 inch cinnamon sticks

    1. In a large pot, add water, white vinegar, tomato paste, corn syrup, orange juice concentrate, dates, molasses, apple juice, and tamarind pulp. Stir to blend. Over medium heat and covered, bring mixture to a boil. Reduce heat to a slow simmer and simmer covered for 15 - 20 minutes.
    2. Using a spice grinder, thoroughly grind onion powder, cloves, black peppercorns, cardamom, garlic powder, mustard seed, cayenne, salt, and cinnamon.
    3. After simmering in step #1, use an immersion Blender to purée mixture and reduce lumps. Add ground spice mixture to pot, stir to blend and simmer (covered) for another 30 - 45 minutes.
    4. Add cider vinegar to pot, stir to blend and return to a simmer. When pot has reached a simmer, remove from heat and strain hot mixture through a wire strainer into a clean pot. Keep liquid, discard pulp. Rinse original pot and restrain mixture back into original pot, return to heat and simmer until thick.
    5. Ladle hot sauce mixture into hot, prepared sealable bottles and seal. Allow to cool. Keeps indefinitely in cupboard, refrigerate after opening.

    Used to traverse Auckland to go to the Otahuhu food court and remember choosing a vindaloo from the curry stall. The chef did that inimitable indian head wobble and said 'I was not ready for his vindaloo', and he meant it, only relenting on the third visit. It was worth the wait but not all that dangerous.

    And the amazing guy who used to run Jai Jalram gujarati in Sandringham, who ordered for you and was right. And his dire experiment with mukhwas icecream, (the little colourful fennel and anise breath fresheners) which he thought would make his fortune...

    Thanks for that thoughtful response Christ, I think you talked yourself around in the end.

    As for the monies being from the state, I think the money is from gaming for problem gamblers not from the general pool. Does the political and administrative function of government wash the money of corruption? I don't think so.

    policy wise, the Salvation Army should not take donations from any source of corruption and they define gambling as corruption on their website.

    The ministerial panel and PWC have, at very best, extrapolated the Salvation Army's' bid to be 'better value', at worst it's slap down for PGF, with no real basis for success from the new contract holder.

    If it's the former, I can only imagine that the SA will have to sub contract experts from the PGF, wich really makes this an employment issue as much as political skulduggery.

    We have just been in contact with Peter Dunne with an offer to take over the problem gambling contract from the Salvation Army. We argued the Army has far too many staff (well in excess of 17) and have not "cured" a single gambler since picking up the contract and are frankly just a bit too noisy with all the band practice.

    We, both of us, are fully equipped with gallons of cold water, a plumbers mate and a mix of Hank Williams songs and have offered to do the job, part time, for 75 bux a week. Dunne is 'seriously considering' the offer.

    Thanks for raising this Russell, so many smaller NGO's have shut over the past eight years and it is politically easy for the closures to happen with so little public reaction.

    Remaining organisations will not speak out publicly because of this kind of perceived threat, so the general public are oblivious to erosion of public health until they need access to a service that no longer exists.

    As an aside; I wonder if the politician who thought to can the PGF guessed that the voters would see problem gamblers as willing and deserving victims, along the same lines as beneficiary bashing?
