    Well, with the lid on, the pressure in the pot should increase, which will increase the boiling point above 100°C…

    The pressure doubles in the pressure cooker – while there is water in it – for every 20 degrees above boiling. Most domestic pressure cookers run at about +1 atmosphere. That is about 120 deg C.

    DO NOT TRY TO ACHIEVE GREATER TEMPERATURES THAN THIS BY JAMMING SHUT THE SAFETY VALVE!

    It has been known in the early days of steam engines for whole steamboats, locos and villages to be demolished when heated water (way way above 100 deg C) goes bad. Or should I say the containers of same go bad.

    Boil water in a kettle before putting it in a pot. Use a lid on every pot so that you can turn the temperature right down, and reduce the amount of water vapour in the house. Way, way more energy efficient – a rolling boil can be sustained on the lowest setting on my stove. Without a lid, it needs about 4 times as much heat, and you have to keep an eye on the water level.

    I thought a few numbers to show why pot lids are really really good!!

    For every teaspoon (about 5 grams) of water evaporated from the water in the pot and thence onto your kitchen windows, the stove has supplied about 11,300 joules. To heat 5 grams of water from 20 to 100 degrees takes about 350 joules. So if you put the lid on the pot, the steam gets recondensed onto the pot lid and drips back into the pot water at damn near boiling temperature, A net return of heat to the water and pot - when it changes back from steam to liquid - of about 10,950 joules.

    My favourite kitchen hack is to use our open fire as a winter barbecue.

    YES! The woodburner for roasting potatoes!. Herbs and a bit of butter on the spud, wrapped in foil and put on a thin layer of embers as the woodstove is slowing down. 15 to 20 minutes. That lovely fractionally "carboned" smell and taste.

    Of course, can't waste those embers....finish with roasted marshmellows!

  • Hard News: Kitchen Hacks,

    6 minute Steam Pudding:

    100gms Butter
    1/2 Cup Sugar
    2 Eggs
    1/2 Cup flour
    1 1/2 teaspoons baking powder
    2 Tablespoons milk

    Cream eggs and sugar.
    Add eggs one at a time.
    Add flour bp and lastly milk.

    Put some raisins (or peaches or apricots) in a glass casserole dish, pour maple syrup or golden syrup in the bottom. Pour the mix on top.
    Cook on high for 6 minutes. If you have a 1200watter then it might be 5min.

    Good chat on Media 3 on security.

    What if we all used just simple encryption for all our communications. Those watching would then have to spend more computer power and time to decipher it all. How deep would we need to go to bring the system to it's knees?

    O Jesus wept. Watching the reds playing the lions. Red and white. Both uniforms. What moron decided this would be a great spectacle. TV truly screws designer uniforms. Especially when the teams get clever and add splashes of "colour" to their uniforms. Both teams end up being washed out when viewed on TV.

    I have to say that Netball takes the cake at the moment with vertical stripes and the same colours regularly conflicting with each other. So bad I have given up watching.

    Please please please take on the North American idea of colours for the home team (usually taking the full overall uniform, and a light version with the teams colours in a very minor role.

    This game, once the players are sprawled all over each other one has no bloody idea who is who.

    Great advert for the game. Not.
