    You have to have intensely-hot oil for that to occur. I agree they are delicious, but without larger cooking facilities than we have (e.g yer average cast-iron frying pan)
    you cant have a perfectly-cooked yellowbelly (one, beheaded &de-finned)fills the pan) *and* crispy fin material.
    Yep, I've tried cooking them seperately but - somehow- without the rest of the fish....

    I haf dried ones, she says evilly, that sometimes I soak in leeetle water or vinegar, and add a drop or 2 to curries

    Hi Islander
    On receiving some snapper from friends when we were up north, I wrapped them individually in foil(with dob of butter and trickle of honey and lemon juice) and placed on the edge of the fire we had goin'. Threw a french stick crammed with garlic and le beurre in foil also,edge, fire also. Best oven, t'was.
    Solved the "no kitchen" scenario. And the fish was divine.

    A female friend of mine has a story about a boyfriend who leapt out of bed on a Sunday morning to make cheese on toast sprinkled with freshly-chopped chilli ...

    And then afterwards sensually reached down to be all lover-man ... yow. Cold bath, apparently.

    O yess! Foil can be good (as can the older solutions of double kelp bags & bladder kelp & mud - you get a combined steam/broil effect.) But - for flounders - to do the Judd thing, you need to flash fry the tail/fins bits while cooking the main body to
    fry-steamed perfection....I have heard of a Japanese technique for something called "Golden Treasure Ships" which I will research...apopo.

    Meantime, off to bed with a sore throat/cold. Bugger Christchurch dust. Bugger earthquakes & travelling. Sweet dreams everyone-

    Immediately had me singing a song from Oliver but they do say "An Army marches on its stomach". I have always thought this a little odd as I would have thought legs were better, oh well, forward with the Revolution Comrades. Who's got the chilly bin and plate of sizzling sausages?.

    Yes, Hilary. That's my sister. She and I were born on the same day 9 yrs apart from different mothers. So she's like me, only bossier. And that isn't the family collection that's there, it's my Mum's!

    There's only a wee bit of Mum's collection there, Jack. The exhibition isn't really about Crown Lynn, as such, it's more about the collectors. Anyway, next time you come up, just ask and Mum will be glad to show "that lovely young man" around!
